Already planning some fresh and delicious food for this spring? Here is a funny suggestion: Peach and Fresh Avocado Salad! Not only kids will love it’s sweet flavor, but parents as well!

INGREDIENTS

1 lb spring mix lettuce
2 fresh Mevi Avocados, sliced
2 peaches, sliced
8oz goat cheese, crumbled
4oz almond slivers, toasted

Mix all the ingredients. You can add some cherry tomatoes if you want to.

(Vinaigrette-Yields 1 ¼ cup)
6oz MeviOil Extra Virgin Avocado Oil
2oz red wine vinegar
2oz honey
Fresh herbs (parsley, dill, or rosemary), finely chopped, to taste
Salt and pepper, to taste.

Shake all ingredients together in a tightly-lidded container or whisk together in a small bowl.

Serve and enjoy!

Have you ever felt like you would eat something really delicious but you don’t want to spend so much time in the kitchen? Well, today’s recipe is great because you will really enjoy it, but you won’t have to be in the kitchen for hours.

This is a colorful and very tasty mix of chicken, mangos, and avocados in a spicy lime dressing.

This recipe makes 8 servingsChange Servings

INGREDIENTS

2 tablespoons brown sugar
1/4 cup water
1/3 cup lime juice
1/2 cup chili garlic sauce
4 cups shredded, cooked chicken
2 medium mangos – peeled, seeded and diced
2 avocados – peeled, pitted and diced
10 ounce spring lettuce mix

DIRECTIONS

In a saucepan over medium-high heat, stir together the brown sugar and water. Bring to a boil, then pour into a medium bowl. Stir in the garlic chili sauce and lime juice. Set the dressing aside.

In a large bowl, toss together the chicken, mangos and avocados. Arrange the spring salad mix on serving plates, then top with a few spoonfuls of the chicken mixture. Pour dressing over the top.

Serve and enjoy!

Have you wondered about a great dish, but you don’t have enough time to spend hours in the kitchen? Well, today’s recipe is ideal to accomplish this. This time I give you some delicious Crab Meat and Shrimp Stuffed Avocados.

PREPARATION TIME

15 to 20 minutes

INGREDIENTS

  • 3 medium avocados, halved, pit and skin removed
  • 4 oz crab meat
  • 5 large shrimp, boiled, chilled and then chopped into small chunks
  • 1 tbsp red bell pepper, small dice
  • 1 tbsp red onion, small dice
  • 1 tbsp celery, small dice
  • ½ tbsp parsley, small dice
  • 1 ½ tbsp lite mayo
  • Fresh black pepper
  • ¼ cup lite mayo
  • 1 tsp siracha sauce (optional, but i love the extra kick and flavor it gives)
  • 2 tbsp Chili Lime Sauce

DIRECTIONS

  • Combine all ingredients together and mix well.
  • Scoop the crab & shrimp mixture onto the avocado.
  • Squirt the sauce over the avocado and sprinkle with parsley.

Spring is almost here and many of us start eating fish and sea food more often. Sometimes we are trying to look for a very fancy recipe, but most of the times the most simple is the most delightful.

Today’s recipe is a side dish special for any fish or sea food dish. No matter what is the main dish, this salad goes well with almost every sea food plate.

INGREDIENTS

  • 1 sliced avocado
  • 3-4 fresh large tomatoes, sliced
  • 1/2 red onion, sliced
  • 2 avocados, sliced
  • 1/4 cup chopped fresh parsley
  • 1 garlic clove, minced
  • 2 teaspoons dried oregano
  • Red wine vinegar (a good, strong red wine vinegar)
  • Extra virgin olive oil (the best quality)
  • Salt
  • Freshly ground black pepper

DIRECTIONS
Place a layer of sliced tomatoes on a large serving platter. Arrange the slivers of red onions and the avocado slices over the tomatoes. Sprinkle with parsley, garlic, and oregano. Drizzle red wine vinegar and olive oil over the platter. Sprinkle with salt and freshly ground black pepper.

Do not refrigerate. Serve immediately and enjoy!

If you like fish or steak, you might have wondered what you might use as a garnish. Today’s recipe is very simple yet delicious. It’s ideal as an appetizer or as a garnish as well.

INGREDIENTS

  • 1 avocado per diner
  • Avocado oil
  • Salt and pepper
  • Lemon juice

INSTRUCTIONS

Cut and peal the avocado. Cut it into thin slices. Spread the slices on a plate. Squeeze the lemon juice over the avocado. Add some avocado oil (if you don’t have avocado oil you can use some olive oil extra virgen). Use it as a salad adding some tomato, as an appetizer or as a garnis, either way is great and delicious.

Grilled Shrimp with Avocado Citrus Salad

Miss Mevi's grilled shrimps with avocado and citrus saladHello everyone!

With this weather we all must take care to avoid catching the flu. To do so, we can drink much more liquids and also we should add more C vitamin to our diet, like citrus fruits. Today’s recipe is ideal for this, and also it’s delicious!

It has shrimps, citrus fruits and of course, avocados! ;O)

INGREDIENTS

  • 12 oz. cleaned and deveined large shrimp
  • 1 cup orange wheels, peeled and cut in rounds ¼ inch thick
  • 1 cup ruby red grapefruit wheels, peeled and cut in rounds ¼ inch thick
  • Mixed greens eg: Baby Arugula, Boston bib and Frisee
  • 2 ripe Avocados from Mexico, peeled and cut into wedges
  • 3 tsp. finely chopped, fresh parsley
  • 1 tsp. brown sugar
  • ½ tsp. salt
  • ½ tsp. onion powder
  • ½ tsp. cumin
  • ¼ tsp. garlic powder
  • ¼ tsp. dried thyme
  • 1½ tsp. Extra Virgin Olive Oil

DIRECTIONS:

Mix dry ingredients in a small bowl.
Heat a large skillet over medium-high heat. Add 1½ tsp. oil to pan; swirl to coat. Sprinkle shrimp with dry ingredients. Add shrimp to pan; cook 3 minutes or until shrimp are done (pink), stirring frequently. Remove from pan; keep warm.
Place shrimp on top of plated bed of greens and citrus. Drizzle with dressing. Finish with cracked black pepper.
Try this salad with a Basil Oil Dressing that can be prepared ahead of time: store ½ cup Extra Virgin Olive Oil and infuse with fresh Basil leaves. Let sit overnight. Drizzle atop salad through a strainer.
Or a Dijon Vinaigrette: Combine 1 cup Extra Virgin Olive Oil, ½ cup white balsamic vinegar, ⅓ cup fresh orange juice, 1 Tbsp. Dijon mustard and a pinch of sugar. Blend and adjust to taste. Use as desired.

Are you planning to visit family or friends and eat leftovers from past holidays? Well, you can twist their flavor with this delicious salad recipe: Arugula salad with mango, avocado and red onions tossed with spicy orange vinaigrette!

Ingredients:

  • 6 cups arugula leaves
  • 1 mango, peeled and cut into long slices
  • 1 avocado, peeled and sliced
  • ¿½ red onion, sliced
  • 1 tbs lime juice

For the spicy orange vinaigrette

  • 1 tbs champagne vinegar
  • 4 tbs orange juice, about ½ orange
  • 2 tbs lime juice, about ½ lime
  • 4 tbs olive oil
  • ½ tsp cumin
  • 2 tbs finely chopped cilantro
  • 1 red chili or hot pepper, sliced
  • Salt and pepper

Instructions

  • Combine all the ingredients for the salad dressing in a jar, close it tight and shake until the ingredients are well mixed.
  • Soak the onion slices in warm water with a dash of salt and 1 tbs lime juice for about 10 minutes.
  • Rinse and drain the onions slices.
  • Toss the arugula leaves with half of the vinaigrette.
  • Add the avocado slices, mango slices and onion slices to the arugula mix, drizzle the remaining vinaigrette on top.
  • Serve immediately.

It’s delicious, but also it’s great for those who are trying to loose weight and burn fat.
