Have you ever felt like you would eat something really delicious but you don’t want to spend so much time in the kitchen? Well, today’s recipe is great because you will really enjoy it, but you won’t have to be in the kitchen for hours.

This is a colorful and very tasty mix of chicken, mangos, and avocados in a spicy lime dressing.

This recipe makes 8 servingsChange Servings

INGREDIENTS

2 tablespoons brown sugar
1/4 cup water
1/3 cup lime juice
1/2 cup chili garlic sauce
4 cups shredded, cooked chicken
2 medium mangos – peeled, seeded and diced
2 avocados – peeled, pitted and diced
10 ounce spring lettuce mix

DIRECTIONS

In a saucepan over medium-high heat, stir together the brown sugar and water. Bring to a boil, then pour into a medium bowl. Stir in the garlic chili sauce and lime juice. Set the dressing aside.

In a large bowl, toss together the chicken, mangos and avocados. Arrange the spring salad mix on serving plates, then top with a few spoonfuls of the chicken mixture. Pour dressing over the top.

Serve and enjoy!

Chicken salad with balsamic cilantro dressing.

December just arrived and this year 2014 is almost gone. Are you ready for all the December celebrations? Today I’d like to share with you this delicious chicken salad.

Yield: For 1-2 as a starter salad, for 1 person as main entrée salad.

Ingredients

For the balsamic cilantro dressing:

  • 1-2 tablespoons balsamic vinegar, adjust based on your preference
  • 2-3 tablespoons olive oil, adjust based on your preference
  • 1 garlic clove, crushed
  • 1 tablespoon roughly chopped cilantro
  • Salt and pepper to taste

For the chicken salad:

  • ~2 cups of your choice of mixed salad greens
  • ½ avocado, diced or sliced
  • 5-6 grape or cherry tomatoes, cut in halves
  • A few slices of red onion
  • 5-6 slices of cucumber
  • ½ cup shredded cooked chicken
  • A few coarsely chopped cilantro leaves

Instructions

To prepare the salad dressing, place the ingredients in a small bowl and whisk lightly. Can be made ahead of time, refrigerate until ready to use.

To prepare the salad, arrange the mixed salad greens on a large plate, add the diced avocado, tomatoes, red onions, cucumbers, shredded chicken, and the chopped cilantro.

Pour the balsamic cilantro dressing over the salad, toss and serve immediately.
